Ripeness and flavor guide:
Khalal (semi-ripe):
These are golden-yellow, small, and round with a crisp, apple-like texture and a mild, sweet flavor sometimes compared to sugarcane or coconut.
Rutab (fully ripe):

As the date ripens, some or all of it turns brownish and the flesh becomes soft, creamy, and sweet with more developed butterscotch notes.
Tamr (dried):
